Cottage Cheese Bagels Recipe

Ingredients:

  • 1/2 cup whole wheat flour
  • 1/2 cup white flour
  • 1 1/2 teaspoons baking soda
  • 1 cup cottage cheese (blend until smooth – I used my NutriBullet for this!)
  • 1 egg (for egg wash)
  • Everything bagel seasoning (optional)

This recipe makes 4 bagels.

Instructions:

1. Mix the Dough:
In a bowl, combine the blended cottage cheese (don’t forget to blend the cottage cheese first so it has a smooth consistency), whole wheat flour, white flour, and baking soda. Stir until it forms a dough. Knead it on a floured surface until smooth. Cover with a towel and let it rest for 10 minutes.

2. Shape the Bagels:
Divide the dough into four pieces. Roll each piece into a rope and shape it into a circle. Place the bagels on a parchment-lined baking tray.

3. Brush and Top:
Beat the egg and brush it over the tops of the bagels. Sprinkle with everything bagel seasoning if you want.

4. Bake:
Heat your oven to 350°F (175°C). Bake the bagels for 20-25 minutes, until golden brown.

5. Cool and Enjoy:
Let the bagels cool for a few minutes. Eat them warm or store them in a container for up to 3 days.
