This Maple Dijon Sheet Pan Sausage & Vegetables makes an easy, healthy dinner and is full of flavor.

This one sheet pan dinner makes a quick week night meal or would even be great for meal prep too! Plus, this recipe can be totally customizable between your pre-cooked sausage of choice and vegetables.

What sausage to choose?

In this recipe, I opt for turkey kielbasa. Compared to pork or beef sausage, turkey sausage is a healthier option for you. Turkey sausage has a lot less calories and fat compared to pork or beef sausage, but maintains its protein content. Chicken sausage would also be a healthier alternative compared to pork or beef. If pork or beef is your favorite though– this recipe will still turn out delicious!

What veggies to choose?

For this sheet pan meal, I honestly picked what I had. Yes, frozen works just as great as fresh. I love staying stocked up on frozen vegetables. They are budget friendly and come in handy all the time. No need to prep or cook before, mix your frozen veggies with your fresh and it will turn out just fine! I chose frozen sweet potatoes and a fresh bag of Brussel sprouts I had. You could totally keep this meal low carb and keto friendly by opting for only low carb veggies. I decided to go for sweet potatoes since I like to incorporate complex carbs into my diet on strength training days. Recipe

Sheet Pan Maple Dijon Sausage & Vegetables

Ingredients:

  • 13 oz turkey kielbasa, sliced
  • 1 frozen bag of diced sweet potatoes (10oz)
  • 1 bag of fresh brussel sprouts (trim and cut in half)
  • 1/2 medium red onion
  • 1 tbls minced garlic
  • 2 tbls olive oil
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tbls parsley

Sauce Ingredients:

  • 1/3 c dijon mustard
  • 1/3 c maple syrup (I opt for RXsugar brand)

Directions:

  • Mix ingredients all together. Lay flat on greased baking pan. Bake for 15 minutes at 400.
  • Meanwhile mix together sauce.
  • After the 15 minutes, pour half of sauce on sausage and veggies, toss together.
  • Bake for another 15-20 minutes and add remaining sauce.
  • Sprinkle with shredded Parmesan.
