This Tuscan Chicken Bake is creamy, low carb and delicious! This easy low carb and keto friendly dish pairs great with cauliflower rice or zucchini noodles.
Ingredients:
- 1lb boneless chicken breasts (I always opt for the thin cut)
- 1 1/2 c spinach
- 3 oz cream cheese
- 1/3 c heavy cream
- 2 tbls minced garlic
- 1/4 tsp salt
- 1/2 tsp onion powder
- 1/4 tsp chili powder
- 1/4 tsp black pepper
- 1 tsp Italian seasoning
- 1/3 c grated parmesan cheese
- 1 14.5 oz diced tomatoes with basil, garlic and oregeno
- 3/4 c mozzarella cheese
- parsley (for garnish)
Instructions:
- Preheat oven to 400 F and grease 9X13 baking dish.
- Place chicken in baking dish and sprinkle with salt.
- Drain tomatoes and pour over chicken.
- In a sauce pan on low heat, stir together spinach, cream cheese, heavy cream, garlic, seasonings, parmesan cheese, 1/2 c of mozzarella together. Mix until smooth and melted together. Pour over chicken.
- Top with remaining 1/4 c of mozzarella cheese.
- Cover with foil bake and bake for 20 minutes. Uncover and bake for an additional 15-20 minutes or until chicken is done.
- Sprinkle with parsley.
