Creamy Tuscan chicken bake

This Tuscan Chicken Bake is creamy, low carb and delicious! This easy low carb and keto friendly dish pairs great with cauliflower rice or zucchini noodles.

Ingredients:

  • 1lb boneless chicken breasts (I always opt for the thin cut)
  • 1 1/2 c spinach
  • 3 oz cream cheese
  • 1/3 c heavy cream
  • 2 tbls minced garlic
  • 1/4 tsp salt
  • 1/2 tsp onion powder
  • 1/4 tsp chili powder
  • 1/4 tsp black pepper
  • 1 tsp Italian seasoning
  • 1/3 c grated parmesan cheese
  • 1 14.5 oz diced tomatoes with basil, garlic and oregeno
  • 3/4 c mozzarella cheese
  • parsley (for garnish)

Instructions:

  • Preheat oven to 400 F and grease 9X13 baking dish.
  • Place chicken in baking dish and sprinkle with salt.
  • Drain tomatoes and pour over chicken.
  • In a sauce pan on low heat, stir together spinach, cream cheese, heavy cream, garlic, seasonings, parmesan cheese, 1/2 c of mozzarella together. Mix until smooth and melted together. Pour over chicken.
  • Top with remaining 1/4 c of mozzarella cheese.
  • Cover with foil bake and bake for 20 minutes. Uncover and bake for an additional 15-20 minutes or until chicken is done.
  • Sprinkle with parsley.
