Loaded Bell Pepper Nachos
These loaded bell pepper nachos are a low carb and keto friendly version of traditional nachos! They are super easy to make, ready in 30 minutes or less, and will definitely be a crowd pleaser! Enjoy them as a snack, appetizer, or a meal!

Bell Pepper Nachos Recipe
Ingredients
- 1lb ground beef
- 2 tbls homemade taco seasoning (or 1 taco seasoning packet)
- 2 bags mini peppers
- 3/4 salsa
- 1 tbls olive oil
Optional toppings:
- Shredded cheese
- tomatoes
- green onions
- cilantro
Avocado Cream Sauce:
- 1 avocado
- 1/2 c sour cream
- 1 tsp lime juice
Instructions:
- In a skillet, brown ground beef until done. Stir in taco seasoning & salsa.
- Wash and cut tops off of mini peppers Cut in half and remove any seeds. Drizzle with a little bit of olive oil and spread out on greased baking sheet.
- Top with taco mixture & cheese.
- Bake at 400 for 10-15 minutes.
- Top with remaining toppings such as tomatoes, green onions, and cilantro. Drizzle with avocado cream sauce.
Avocado Cream Sauce:
Stir and combine 1 smashed avocado, 1/2 c sour cream, & 1 Tsp of lime juice until smooth. Often, I will use my Nutribullet Blender for this!
