These low carb Blueberry Yogurt Muffins are delicious and so easy to make! These healthy muffins are light and fluffy, with 7g of protein and only 3 net carbs per serving. The key ingredient is the yogurt which makes them moist and gives them an added protein boost.
If you have never made yogurt muffins before, you are in for a treat! You can enjoy these one bowl muffins within 30 minutes. They are a perfect keto friendly snack or healthy option when craving something sweet!
*To keep these muffins low carb and keto friendly, you need to be careful with your yogurt choices. Some yogurt brands can be very high in added sugar. For a low sugar and keto friendly option, I would recommend Chobani Zero or Two Good Yogurt.
Recipe
Ingredients:
- 1 5oz Vanilla Low Sugar Greek Yogurt
- 3 eggs
- 1/2 tsp vanilla
- 1/4 tsp salt
- 2 ½ c almond flour
- 1/2 c granular sweetener (Swerve is my favorite to use)
- 2 tsp baking powder
- 1/2 c blueberries*
Directions:
- Gently mix first 6 ingredients all together.
- Fold in blueberries.
- Pour into 12 greased or lined muffin tin.
- Bake for 22-25 mins at 325 F.
Notes:
*You could swap blueberries for any berries of your choice!
